The judgement calls a counter never has to make.

A restaurant runs on timing and on tables, and both are decisions somebody makes on the night: how long a table is held, when mains are fired against how the room is filling, which section a server is answerable for. ManageHex carries those decisions rather than making them. Course timing travels with the order, so a kitchen is not plating mains while starters are still going out. An item taken off at seven is off on every menu at that moment, including the guest phones already open at a table. An allergen note stays attached to the line it was entered on instead of being passed along out loud.

Where restaurant billing stops resembling a counter transaction.

A counter takes one payment from one person. A dining room regularly has to divide a bill between four people who ate different things, take part of it now and leave the rest open, and reopen it ten minutes later because somebody forgot the second bottle. That is the awkward case ManageHex is built around rather than the exception it makes you work around. What each section sold, and who authorised anything unusual, is on the report a manager reads at the end of the week, which is generally what a conversation about staffing the busy shifts actually needs.
